This is a Chinese chicken stir fry inspired by the lettuce wraps from P.F. Changs and its a big hit in my house. Start with 3 large boneless skinless chicken breasts and dice them finely. Saute in 2 tblsp butter for about 4 minutes, add 1 small package of fresh sliced mushrooms, a cup of finely diced cashews, 1/4 cup soy sauce and 1/8 tsp pepper. Continue to saute until chicken and mushrooms are cooked through. Serve over sticky rice.
