Open-Faced Bacon Burgers
Mmmmmm - who can pass up on a tasty bacon burger? Whip up these fast little guys with some leftover strips of crispy bacon and a little surprise - English muffin half-buns.
I started by mixing my burgers and making patties about the size of the English muffins. 2 pounds of ground beef, 1/4 cup of Italian bread crumbs, 1 tablespoon Worcestershire sauce, 1 egg, and a generous sprinkle of Mesquite grill seasoning over the top of each patty. I browned these up to medium-well in my cast iron skillet. While the burgers were cooking, I halved the English muffins and placed them face up on a cookie sheet in the broiler until they were well toasted. I topped each with a slice of garden fresh tomato, a cooked burger patty, 3 small pieces of bacon and a bit of finely shredded mozzarella and popped them back in the broiler until the cheese was melted and browning on top. This was a big hit and a great game or movie night dinner!
