Taco Pie - Leftovers Remade

Another great use for leftovers - this time - use your leftover taco or nacho meat!
Start with a large, oven safe skillet or baking dish - 
I love my large cast iron skillet for this as its the same size as the tortillas.  



Add a tablespoon or two of canola oil to the bottom of your skillet.  
Place a tortilla on the bottom.  
Top with about 1 1/2-2 cups cooked taco or nacho meat 
(browned ground burger or turkey with about a cup of salsa added).  
Add 1/2 can of canned kernel corn.  
Douse with as much or little hot sauce or taco sauce as you prefer - 
I had a bunch of leftover Taco Bell packets so I used a couple of each 
of the salsa verde and mild taco sauce.

Sprinkle with a large handful of shredded colby jack cheese.  Top with a second tortilla and press down well.  Repeat layers ending with the third tortilla and another handful of cheese.
 Bake in the oven at 350 about 15-20 minutes 
until the top is golden and it is heated through.
 Just look at that!
 Top with lettuce, salsa and sour cream and serve with a side salad.  
This disappeared in no time!
