Got a few leftover pieces of fried chicken? The gang will never know they are eating leftovers with this tasty taco.
Pull your meat off the bones and slice into bite-sized strips - make sure you include some of the crispy skin. In a saute pan, heat 2 tbsp olive oil. Add about 1/4 cup thinly sliced onions and 2 thinly sliced sweet peppers (you can use any color you like, these are orange, yellow and red mini bell peppers- a couple handfuls). Add your chicken and saute over medium-high heat until the peppers and onions are soft, the chicken is heated through and the chicken skin is crispy. Remove from heat.
Wipe your pan clean with a paper towel and return to the burner over medium-low heat. Heat corn tortillas in the pan two at a time until they start to crisp - fold while still hot. Fill with chicken/onion/pepper mix, shredded cheese, and lettuce. Drizzle with ranch dressing and add a few pieces of fresh parsley. Great for a hot summer day!
