Miniature Peanut Butter Treats


This tasty cookie treat was passed along from a friend at our first cookie swap years ago.  Its a great recipe to put the kids to work on and one of the few that I have not made adjustments to because I can't think of anything that would make it better!

1/2 cup margarine, softened
1/2 cup brown sugar, packed
1/2 cup granulated sugar
1 egg
1/2 cup creamy peanut butter
1/2 teaspoon vanilla
1 1/2 cup flour
3/4 teaspoon baking soda
1/2 teaspoon salt
1 bag miniature peanut butter cups

Combine margarine  sugars, egg, peanut butter and vanilla in mixing bowl; beat until smooth.  Add flour, baking soda and salt; mix well.  cover dough and chill.  When cold enough to handle easily, roll into small (walnut-size) balls; place each ball in a greased miniature muffin tin.  Bake at 375 degrees for 6-9 minutes until edges are golden.  Remove from oven; gently press 1 peanut butter cup into each cookie to make depression.  Cool in pan.  (I did a double batch and ran out of peanut butter cups so I used Hershey's kisses which were equally tasty!)
