Make Ahead Breakfast Sandwiches

Apparently I was in a breakfast mood on Sunday night...  At about 8:30 p.m. when the kids went to bed is when I made the Blueberry Coconut Muffins and then a round of these tasty breakfast sandwiches for those who prefer something a little more on the savory side.  

These are so much better than an Egg McMuffin from the drive-thru - more taste and virtually no grease!  I don't know why I don't think to do this more often because it only took about 15 minutes to make 7 of them.  For less than $9, I can make a dozen of these and have breakfast for my husband and I for 6 days with our travel mugs of coffee!  That's the cost of about 2 drive-thru breakfasts!  Most days we wouldn't even bother with breakfast - the kids eat at their daycare - so my husband and I would just starve until lunch.  And if you don't like English muffins, you can do this with bagels for just a few cents more.

I started with splitting my English muffins and laying them face up on a baking sheet.  I ended up with 7 sandwiches because that is all I could fit on one sheet.  I baked them at 350 degrees for about 5 minutes.  Then I flipped them over, put them back in the oven and turned the oven off.  This lightly toasts the English muffins without making them crispy - this will keep them from becoming soggy later when you reheat them.
Meanwhile, I fried one egg per sandwich.  When I fried the egg, I popped the yolk slightly so it would cook through.  By doing this but not scrambling it, you will get the nice separate tastes of the yolk and white.  I seasoned the eggs with a little salt & pepper too.
The bottom of each English muffin got topped with sliced ham (this was Oscar Meyer's Carving Board ham but sliced lunch hams work just as well).  The eggs went on top of the ham and then were topped with a slice of American cheese and the top of the muffin.
Once these cooled, I wrapped each in a piece of foil.  The food service foil sheets work perfectly.  These store in the fridge for a few days or in the freezer for a few weeks.  If frozen, I recommend thawing in the fridge overnight before heating.  If refrigerated, take them out of the foil in the morning and place on a paper plate.  Microwave 1 minute at a time until it is heated through and the cheese is melting.  Then I re-wrap in the foil so we have hot sandwiches to eat on our long commutes to work.
