With the warm weather comes the urge to grill! I love this time of the year as my husband is willing to man the grill and I have time to putz around the deck and flower beds while dinner cooks. Here's an easy shish-kabob recipe for the whole family:
A tangy marinade: 2 tbsp olive oil, 2 tbsp white vinegar, 2 tbsp lemon juice, 1 tbsp spicy brown mustard, 1/4 tsp pepper, 1 tsp favorite grill seasoning or seasoning salt.
While the meat marinades for about 20-30 minutes, boil a pot of quartered red potatoes until tender. Also, if you are using wooden skewers, get those soaking in warm water.
Campari tomatoes are the perfect size for grilling.
My new favorite - mini sweet bell peppers - perfect for snacking, grilling and salads. These are fairly new in my store but I already love them. They come in a gallon-size bag that helps keep them perfectly fresh much longer than the large size bell peppers. Love!
So pretty!
I also use mushrooms and usually onion (forgot to put those on the grocery list).
I sometimes also use chunks of whatever smoked sausage or kielbasa
is on sale - little smokies are great too.
When potatoes are fork tender drain and run cool water on them so you can stand to handle them. :)
Ready to go! Grill about 10 minutes each - by the time the meat is medium well
the veggies are usually just perfect.
Yum!
